Chicken Escalopes with Squash Rocket Salad
The simplest fried chicken recipe we have ever come up with, and doesn’t require deep frying either. A great dish for lunch or a easy dinner for the week, if opening the wine is also appropriate because this is a heavenly combination of food and wine.
Ingredients
For 2 people
2 chicken breasts
1 tbsp mustard
1 egg
1 garlic clove
breadcrumbs
1/3 of a whole butternut squash
Rocket
Radishes
Lemon wedges
Method
Chop the squash into 1cm cubes, toss with olive oil and roast in a 180c oven until soft.
Flatten the chicken breasts between clingfilm with a rolling pin. Crush the garlic and whisk together with the egg and mustard. Coat the chicken in the egg mixture, then the breadcrumbs.
Heat a little oil in a frying pan and fry the chicken until golden and cooked through.
Assemble a salad with rocket, sliced radish, the roasted squash, olive oil, salt, pepper and lemon juice.
Slice the chicken and serve on top.
