No Fail Roast Chicken With Redcurrant Salad

Ok you have to trust us on this one, but the key things with the chicken are:

Weight of chicken = 1.2kg – roast for no longer than 52 minutes

Weight of Chicken = 2kg – roast for now more than 58 minutes

Say your chicken weighs 1.6kg, go 55 minutes, etc.

 Follow the recipe by the letter to guarantee perfectly crispy skin and the tenderest, juiciest meat you have ever seen.

We find organic chicken tends to stay ever so slightly juicer but standard works just as well.

 The legs can stand a lot of cooking so we are going short and sharp with the time and temperature to get the breast just cooked and out of the oven before it begins to turn dry.

 

Ingredients

For 4 people 

For the Chicken

1 Whole chicken

Table salt

Sea salt

Black pepper

 

For the Salad

Leaves of your choice

Sliced red onion

Dried redcurrants

Fried pancetta

 

Method

If your chicken is already trussed, leave it. If not, attempt it yourself or ask a butcher. If neither of these are an option, it will be fine as is.

Turn your oven to 235c and let it come up to temperature.

Pour about a cup full of table salt inside the chicken’s cavity.

Liberally cover the skin with sea salt (this makes it crisp up nicely) and grind some black pepper over the top.

Put into the oven based on the timings above.

When cooked remove from the over, DO NOT COVER, but leave for MINIMUM 45 minutes.

The chicken continues cooking after removing from the oven so you may be alarmed if you slice into it immediately. Leaving it is crucial to the recipe. The meat will stay warm, don’t reheat before serving as this will dry it out.

Combine the salad ingredients with a little olive oil and salt to taste.
