Ginger Spring Onion Noodles
Our super simple and go-to lunch recipe for ginger and spring onion noodles is as easy as it is delicious. Also makes a great side dish for our popcorn shrimp or salt & pepper chicken wings.
On regular rotation in our house!
Ingredients
For 2 people
2 packs instant Ramen noodles
Finely sliced whites and greens from a bunch of spring onions
2cm chunk of ginger finely chopped
4 tbsps grapeseed oil (vegetable will also work)
1 tbsp soy sauce
1 tbsp red wine or apple cider vinegar
Method
Mix the oil, soy sauce, vinegar, ginger and spring onion whites in a bowl. Leave for at least 15 minutes but can be left in the fridge for a few weeks (handy for whenever you fancy this dish.)
Boil the noodles according the packet instructions. Drain and combine with the sauce. Top with spring onion greens, sesame seeds, crispy fried onions and pickled sushi ginger.
