Fried Chicken and Watermelon

Brunching at weekends is a favourite pastime of ours, and one we love to get creative with.

Combining some of our favourite brunches from London to NY this recipe has it all. Crispy and delicious fried chicken, soft, sweet waffles. Eggs for indulgence and watermelon for refreshment. All topped off with maple syrup for a silky shine.

 

Ingredients

For 4 people 

4 x Chicken thighs

500ml Buttermilk

Flour

4 Eggs

Watermelon

For the Waffles:

2 cups Plain flour

4 tsp Baking powder

2 Eggs

1 1/2 cup Warm milk

1/2 cup melted butter

Pinch of salt

2 tsp vanilla extract

2 tbsp Sugar

Maple syrup to serve

 

Method

Cover the chicken in buttermik and leave for at least an hour.

Roll in seasoned flour then deep fry until golden.

For the waffles: melt the butter and warm the milk. Combine wet ingredients with dry and mix to a batter. USing a waffle maker, cook batter until golden.

Serve with watermelon, fried eggs and maple syrup.
