Grilled Oysters and Tarragon Butter
As oyster lovers we will admit we were scared to sway from the classic (raw with a squeeze of lemon and drop of tabasco – soooo good) but gently grilled on the BBQ with tarragon butter is an absolute game changer.
The rich butter, punch of tarragon makes the sparkling wine pop like you couldn’t imagine!
This and the Le Petit Beaufort is our new go-to for a special occasion (or a Saturday afternoon when we are feeling fancy)

Dried Tarragon
Salted butter
Method
Shuck your oysters. Mix dried tarragon and salted butter together. Add 1/2 tsp to each oyster and pop on the BBQ until the butter starts bubbling. Carefully take of the heat, regard some of the excess oil, wait to cool and enjoy!
