Aubergine and Mozarella Wraps

A wonderful aperitif or starter. Firsts served at our supper club to guests claiming ‘they didn’t know aubergine could be this delicious!’ we’re really happy to share this with you.

A dish we first tried in Sicily at the house of an olive oil farmer, we fell in love with the simplicity of the dish and how it allows the ingredients to shine.

Try it yourself, perfect for your next dinner party.

 

Ingredients

1 aubergine

1 block of mozzarella

Parmesan

Our arrabbiata sauce

Basil leaves

 

Method

Slice the aubergine lengthways with a thickness of about 5mm (we use a mandolin)

Fry in a griddle pan till nicely coloured and dry then transfer to a baking tray with no overlapping.

Grate the mozzarella with a little parmesan and cover each aubergine slice.

Drizzle a spoonful of the arrabiata sauce over the cheese and add a couple of basil leaves.

Grill until the cheese has melted.

Roll each wrap and use a cocktail stick to hold together if need be.
