Prawn Pad Thai
This super simple meal comes together in less than 10 minutes. All of the ingredients can be found in most good supermarkets although you might have to seek out an oriental supermarket to find palm sugar.
Whilst you are there, we recommend having a good look round. These places are absolute treasure troves of exciting ingredients that feature in lots of asian cuisines.
Ingredients
For 2 people
For the Pad Thai Sauce:
1 tbsp Tamarind Sauce
1 tbsp Soy Sauce
3 tbsp Vegetable oil
3 Shallots finely chopped
2 tbsp Palm sugar
1 tbsp Fish sauce
For the dish:
2 Eggs, beaten
2 Portions of rice noodles, soaked and drained
Prawns (as many as you like)
Bean sprouts
1 tsp Chilli flakes
2 Spring Onions, chopped
2 tbsp Crushed, roasted peanuts
Lime wedges
Method
To make the sauce, fry the shallots until soft and caramelised then add the rest of the ingredients. Stir whilst cooking for a few minutes then transfer into a bowl to cool.
Add some oil to a wok then add the eggs. Stir to scramble then add the noodles and prawns.
Once the prawns are cooked, add the sauce, bean sprouts and peanuts.
Serve with chilli flakes and spring onion.
