Aged Wing Ribs with Yakitori Sauce and Tempura Oysters
Whilst Yakitori literally means 'grilled bird', the sauce used to coat each skewer is an umami bomb of flavour that has the power to add a punch to many other dishes. Combined with a a rich and tender piece of dry-aged beef, the salty and deep sauce gives an extra layer of flavour whilst letting the intensified beef shine.
The fragrant dashi helps to temper the sauce and opens up the door to adding some more flavours of the sea. We chose to drop some tempura oysters onto the plate for both texture, richness and a touch of something special.
Combined with sharpness from pickled carrots, this puts a variety of flavours that we love, together on a plate. Kick your Sunday roasts into a whole different league or pull out all the stops for a special evening dinner.
