Murdoch Hill Sauvignon Blanc


 
 

Murdoch Hill is a high altitude vineyard just outside of Adelaide that produces some serious wines. The cool climate is akin to neighbouring New Zealand and produces a Sauvignon blanc with all the classic flavours you would expect. Green herbs and passionfruit jump out the glass and the refinement that has been shown in this bottle takes a popular style and makes it elegant.

Panzanella Salad

Tomato’s are our absolute favourite, we eat them everyday, grow them every summer and generally can’t get enough of them. So, when we have some leftover bread (stale or not) panzanella is often the answer.

It’s the perfect lunch or summer evenings dinner, fresh and vibrant but more filling than your standard salad. We love the way the bread soaks up the delicious flavours of the olive oil and tomatoes.  Quick and simple to make but so satisfying!

 

Ingredients

350g tomatoes – cut into chunks

½ red onion -sliced into strips

2 handfuls of a green of your choice (we had rocket)

1/3 of a cucumber – skin removed and cut into chunks

Good quality bread (e.g. sourdough or baguette)

Olive Oil

Salt

Pepper

 

Method

Add the tomato’s, red onion, cucumber and greens into a big bowl and stir together. Tear up the bread and stir into the salad letting the bread soak up all the tomato juices. Now drizzle generously with olive oil and season with salt and pepper.
